Combine 80 grams (¾ cup) of chopped cauliflower with 120 to 160 milliliters (½ to ⅔ cup) of unsweetened, unflavored plant-based milk into a blender or food processor and blend it until it’s almost smooth. Next, add two 100-gram (3.5-ounce) packages of frozen, unsweetened acai berries and 275 grams (2 cups) of pitted fresh or frozen dark sweet cherries. For sweetness, avoid using bananas as these inhibit red pigment absorption when taken in the same meal. Instead, use pitted dates, agave, sweet red apple or a pear. Then blend everything until it’s smooth. You can add more vegan milk as necessary to achieve the desired consistency. Lastly, divide the mixture into bowls and top it with 30 grams (2 tablespoons) of toasted hemp seeds, and additional cherries. Add cinnamon or nutmeg for flavor variety and serve with lime wedges. Enjoy this tasty bowl that offers a fiber-rich base from the blended cauliflower and plant-based milk!
